White Auxey-Duresses
"Les Crais"

White flowers and citrus fruit on the nose, with a toasty, oaky base.
The palate shows a good balance of fattiness and freshness, making it a sophisticated and elegant wine.

VITICULTURE

Sustainable agriculture.
Soil tillage.
Green harvest.
Harvested by hand.

VINIFICATION

Pneumatic press, temperature controlled.
Alcoholic and malo-lactic fermentations in barrel.
Aged in French oak (30% new) and in tanks.
Bottled after 12 months.

AGING AND SERVING RECOMMENDATIONS

The suppleness of this wine allows it to be enjoyed young, and as well after a few years in the cellar (3 to 7 years).

PAIRING

This wine will go perfectly with oven-roasted fish, quenelles, cold cuts, or when aged, fowl in a cream sauce.
